Chipotle Roasted Cauliflower Steaks

- 1 head cauliflower
- 1 Tbsp extra virgin olive oil
- 2 garlic cloves, minced
- 1-2 chipotles in adobo
- 2 Tbsp lime juice
- 1 Tbsp adobo sauce from can
- 1 Tbsp tomato paste
- 2 tsp honey or agave syrup
- 1 tsp smoked paprika
- ½ tsp cumin
- salt and pepper, to taste
Preheat the oven to 400°F.
Remove the stem and leaves from the cauliflower. Slice the head in half and then slice each half in half again to create 4 steaks.
Combine the olive oil, garlic cloves, chipotles, adobo sauce, lime juice, tomato paste, paprika, cumin, and salt and pepper in a small food processor or single serve blender. Blend for 1 minute, or until smooth. Alternately, you can finely mince the chipotles and combine the ingredients in a small bowl and whisk well.
Brush one side of the cauliflower steaks with the sauce. Bake for 15 minutes. Turn the steaks over and brush with the remaining sauce. Cook another 10 minutes. Remove from the oven and serve.
