Garlic Parmesan Chicken Skewers

Garlic Parmesan chicken skewers are made with juicy chicken breasts that are bathed in a simple zesty marinade, grilled to tender, melt-in-your-mouth perfection, and finished with a buttery garlic Parmesan sauce.

Ingredients

Garlic Chicken Marinade

  • lb boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 1 medium lemon, juiced (about 3 Tbsp)
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp low-sodium chicken broth or water
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp lemon pepper seasoning
  • ½ tsp smoked paprika
  • ½ tsp sea salt
  • ¼ tsp cracked black pepper

Garlic Parmesan Sauce

  • 3 garlic cloves, minced
  • Tbsp reduced fat or unsalted butter, melted and cooled
  • 2 Tbsp fresh parsley, minced
  • 1 Tbsp freshly grated Parmesan cheese
  • ½ lemon, juiced (about 1½ Tbsp of juice)

Instructions

  • In a small bowl, whisk together the lemon juice, olive oil, broth, garlic powder, onion powder, lemon pepper seasoning, smoked paprika, salt, and pepper.
  • Add the cubed chicken to a large Ziploc bag. Pour the marinade over the chicken and shake/knead until the chicken is evenly coated with the marinade. Allow the chicken to marinate for a minimum of 30 minutes in the refrigerator.
  • While the chicken marinates, soak wooden skewers in water for at least 20 minutes to prevent burning. Preheat the grill to medium-high heat.
  • Place the chicken chunks on the prepared skewers. Grill the chicken for 3-4 minutes per side. Baste with the garlic Parmesan sauce on both sides the last 30 seconds of cooking. Remove from heat and serve with rice or couscous.
