Iced Pumpkin Pie Energy Bites
These Iced Pumpkin Pie Energy Bites are a fun no-bake twist on traditional pumpkin pie. They pack in tons of flavor and are a healthy, nutrient-dense snack made from rolled oats, pumpkin puree, almond flour, walnuts, dates, almond butter, pumpkin pie spice and cinnamon.

Pumpkin Pie Energy Bites
- 1½ c rolled oats
- ⅔ c pumpkin puree
- ⅔ c almond flour
- ½ c dates, pitted (heaping)
- ¼ c walnuts
- 2 Tbsp almond butter or peanut butter
- 1 tsp pumpkin pie spice
- ½ tsp ground cinnamon
Pumpkin Spice Icing
- 1½ Tbsp vegan or unsalted butter
- 3 to 4 Tbsp confectioner's sugar (more if desired)
- ½ Tbsp vanilla unsweetened almond milk
- ¼ tsp pumpkin pie spice
Combine the rolled oats, pumpkin puree, almond flour, dates, walnuts, almond butter, pumpkin pie spice, and cinnamon in a food processor and blend on high until smooth. Pause several times to scrape down the sides and continue pulsing.
Once the ingredients are blended together they should begin to form a large semi-sticky ball of dough. When that happens, stop the food processor.
Use a small spoon to scoop a bite-size portion of dough. Roll the dough into a ball in your palm. Set aside on a plate and repeat until all bites are made.
Melt butter in a microwave safe bowl. Whisk in the almond milk and pumpkin pie spice. Add confectioner's sugar 1 tablespoon at a time until you reach the desired icing consistency. We have found that using 3 to 4 tablespoons creates the perfect consistency for lightly drizzling, without being too thick or too runny.
Drizzle icing over protein balls and sprinkle with extra pumpkin pie spice, if desired. Enjoy! Store in an airtight container in the refrigerator for up to 5 days.
