Pesto Bruschetta Chicken

Pesto bruschetta chicken is a delightfully fresh and easy summer dinner dish that brings together juicy pan-seared chicken breast, melted mozzarella cheese, herby pesto, and mouthwatering marinated tomatoes.

Ingredients

Bruschetta Topping

  • 10 oz cherry or grape tomatoes, halved
  • 2 garlic cloves, minced
  • 3 Tbsp fresh basil, thinly sliced
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp balsamic vinegar
  • salt and pepper, to taste

Pesto Chicken

  • 1.25 lb chicken breast, trimmed and butterflied
  • 1 Tbsp extra virgin olive oil, divided
  • ¾ tsp sea salt
  • ¼ tsp cracked black pepper
  • 1 tsp granulated garlic
  • 1 tsp Italian seasoning
  • 4 slices of mozzarella or provolone cheese
  • ¼ c pesto

Instructions

  • Make the bruschetta: combine the tomatoes, garlic, basil, olive oil, vinegar, salt and pepper in a small bowl. Toss to coat. Set aside.
  • Trim and butterfly the chicken breasts. Pat dry. Brush both sides of the chicken with ½ tablespoon of olive oil. Season both sides with salt, pepper, garlic powder, and Italian seasoning and rub into the chicken.
  • Pan-seared: Heat the remaining ½ tablespoon of olive oil in a large frying pan over medium-high heat. Once the oil is hot, add the chicken in a single layer. If you're using a smaller pan, cook the chicken in batches. Pan sear the chicken on one side for 3-4 minutes. Reduce heat to medium heat. Turn over and brown another 2-3 minutes. Cook an additional 1 minute on each side. Top with cheese, if desired, the last minute of cooking. The chicken should be golden brown on both sides and reach an internal temperature of 165℉.
    Grilled: Preheat the grill to medium-high heat. Add the chicken to the grill in a single layer and cook on one side for 3-4 minutes. Turn the chicken and cook another 2-3 minutes. Flip and repeat for 1 minute per side. Top with cheese, if desired, the last minute of cooking. The chicken should be lightly golden brown with grill marks and have an internal temperature of 165℉.
  • Remove the chicken from heat and top with pesto and bruschetta. Serve with your favorite pasta and enjoy!
