- 1½ c whole wheat flour
- 1½ tsp active dry yeast
- 1 tsp garlic powder
- ½ tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- ½ tsp cracked black pepper
- 2 eggs
- 1½ c unsweetened almond milk
- 1½ c warm water
- ½ tsp honey
- 2 Tbsp canola oil
- ⅔ c sharp cheddar cheese, shredded
- ¼ c fresh herbs (chives, basil, thyme)
- 6 slices turkey bacon, crumbled
Heat a large skillet to medium heat. Spread bacon slices out evenly in the pan. Cook 4 to 5 minutes, or until crispy, turning halfway through. Transfer to a plate to cool. Crumble into small pieces.
Mix dry ingredients in a large mixing bowl.
Mix wet ingredients in a medium mixing bowl. Make a well in the dry ingredients and pour in the wet ingredients. Stir well to incorporate. Fold in the cheddar, bacon crumbles, and fresh herbs.
Let the batter sit while the waffle iron heats up. Heat the waffle iron to medium-high heat. Preheat the oven to 200°F.
Spray the top and bottom of the waffle iron with cooking spray. Pour roughly ½-¾ cup of batter onto the waffle iron. Cook based on your waffle iron cycle type (light on/off, timer, etc). It should take roughly 2 to 3 minutes per waffle.
Transfer the cooked waffle to the cooling rack on the baking sheet. Keep the baking sheet in the oven until you're ready to eat the waffles. This will prevent the waffles from getting soggy. Remove from oven when you're ready to eat. Top with butter, hummus, avocado, fried egg, or topping of choice. Enjoy!
