Mint Chocolate Chip Smoothie

This smoothie tastes just like a bowl of rich, creamy mint chocolate chip ice cream without the guilt. Banana, spinach, oats, almond milk, cacao nibs, peppermint extract and vanilla protein powder combine in a healthy smoothie that tastes like dessert.

Ingredients

  • 1 medium banana, diced and frozen
  • 1 c whole spinach or kale leaves, frozen, loosely packed (½ cup chopped)
  • ¼ c rolled oats
  • 1 Tbsp cacao nibs
  • ½ tsp vanilla extract
  • tsp peppermint extract (sub mint extract for more potent mint flavor)
  • 1 scoop vanilla or chocolate protein powder
  • ½-⅔ c unsweetened almond milk (vanilla or chocolate)

Instructions

  • Freeze spinach and banana ahead of time. We recommend at least 2 hours, but prefer overnight.
  • Combine banana, spinach, oats, cacao nibs, vanilla, peppermint extract, protein powder, and milk in a high powered blender. Blend until smooth, 1-2 minutes.
