Why Youโll Love This Recipe
- Tastes like mint chocolate chip ice cream.
- Rich and creamy texture.
- Hidden veggie you wonโt taste!
- High-protein option for a fueling breakfast/snack.
- Vegan/plant-based and easily gluten-free modified smoothie.
Ingredients
- Banana
- Spinach/kale – for ultimate freshness, flash freeze fresh spinach for 1-2 hours then add it to the smoothie (instead of buying frozen spinach). We use baby whole leaf spinach, but you can also chop it.ย
- Rolled oats
- Milk
- Protein powder – vanilla or chocolate protein powder work well in this recipe.
- Cacao nibsย
- Vanilla extract
- Peppermint extract – peppermint has a more mild minty flavor, so if you like more potent mint flavor sub in mint extract.
How to Make Mint Chocolate Chip Smoothie
Freeze spinach and banana ahead of time. We recommend at least 2 hours, but prefer overnight.
Combine banana, spinach, oats, cacao nibs, vanilla, peppermint extract, protein powder, and milk in a high powered blender. Blend until smooth, 1-2 minutes.
Modifications
- Spinach/Kale – try frozen zucchini or cauliflower instead of spinach or kale for extra creamy texture and different vitamins and minerals.ย
- Protein powder – We recommend using vanilla protein powder for a more minty flavor, while we recommend chocolate protein powder for a richer, more chocolatey flavor. We donโt recommend using mint or mint chocolate flavored protein powders unless you plan to omit the peppermint extract.
Tips for Making Mint Chocolate Chip Smoothie
- Flash freeze fresh banana and spinach (instead of using prepackaged frozen ingredients) ahead of time for ultimate freshness.ย
- Keep several small freezer baggies of banana, spinach, and cacao nibs in the freezer for easy grab-and-go smoothie bases. Then just add oats, milk, peppermint and vanilla extracts, and protein powder, blend, and go!
- Make it a smoothie bowl by reducing the amount of milk for a thicker texture. Top with more cacao nibs, granola, chopped almonds, and sliced banana.ย
