Raw Quinoa Walnut Brownie Bliss Bites

These Raw Quinoa Walnut Brownie Bliss Bites are delicious, naturally sweetened, plant-based raw brownies rolled into cute bite size balls. A little package of guilt-free, nutrient-dense and healthy indulgence!

Ingredients

  • ¾ c cooked quinoa
  • 1 c walnuts, divided, chopped
  • ½ c pitted dates
  • 3 Tbsp cocoa powder
  • 2 Tbsp real maple syrup (optional)
  • 1 Tbsp vanilla unsweetened almond milk
  • 2 Tbsp mini chocolate chips vegan or regular

Instructions

  • Combine quinoa, dates, ½ cup of walnuts, cocoa, maple syrup (if desired), and almond milk in the food processor. Pulse until the mixture is thoroughly processed and forms a sticky ball. The batter will be pretty sticky. Remove the food processor blade. Fold in the mini chocolate chips.
  • Finely chop the remaining ½ cup of walnuts. Use a spoon to form bite-size balls of batter. Roll the balls in the chopped walnut to coat the outside. You can omit this step or use as much or as little of the walnuts for coating as you want. I like the extra crunch.
  • Store bliss bites in an airtight container in the refrigerator for 4 to 5 days.
