All it takes is brown rice, lime juice, fresh cilantro, salt and pepper, plus 22 minutes in a pressure cooker for the perfect Chipotle inspired side dish. It’s a yummy mix in for burritos, taco bowls, enchiladas, grilled shrimp and chicken, curries, you name it!

How to Make Cilantro Lime Brown Rice
For this recipe, you’ll want to get out your pressure cooker. It’s the quickest, fool-proof method for making brown rice and well worth the investment! You can also make this rice over the stove-top or using a rice cooker. For this recipe, we will only focus on the pressure cooker method.
Pressure Cook Brown Rice
Start by rinsing the brown rice in a grain colander. This will remove any dust and dirt and help make the rice even fluffier when cooked.
Next, combine the rinsed brown rice and water in the pressure cooker. Seal the lid of the pressure cooker and check that the vent valve is in the “not venting” position.
Adjust the pressure cooker settings by selecting “Pressure Cook” and set the timer for 22 minutes. Make sure that the pressure cooker is on the “high” pressure cook setting.
The pressure cooker will chime once it starts to pressurize. It may take several minutes to pressurize, at which point the timer will begin to count down from 22 minutes.
Once the timer reaches 0 minutes, it will chime again. Allow the pressure cooker to naturally vent for 5 minutes, before moving the vent valve to “venting” position. Let all steam vent out before opening the lid. Fluff the rice with a fork.
Make Cilantro Lime Brown Rice
Wash the outside of the lime and pat dry. Zest the lime with a zester directly over the cooked brown rice.
If you’re looking for a good quality zester, I highly recommend the Microplane zester/grater. I use it for EVERYTHING, from zesting to cheese grating. It’s awesome!
Cut the lime in half and squeeze out the juice over the brown rice. Stir in salt, pepper, and fresh cilantro. Transfer to a bowl and serve.

- 1 lime, juiced and zested
- ½ c fresh cilantro, chopped
- ¼ tsp sea salt
- ¼ tsp black pepper
